Avocado Tuna Poke

Ingredients

  • Avocado Tuna Poke
  • 4 oz Ahi Tuna, diced small
  • .5 oz Green jalapeños diced fine
  • .5 oz English cucumber, diced fine
  • .5 oz Green scallions, sliced fine
  • 2 oz Avocados From Mexico, diced small
  • .5 oz Pine nutes, toasted
  • .5 oz Sesame oil
  • 1 oz Red onion, diced small
  • 1 oz Wasabi Aioli
  • 1 oz Sriracha Aioli
  • .05 oz Sesame seeds, mixed white and black
  • .05 oz Green scallions, ribbons
  • Avocado Wasabi Aioli
  • 1 c Avocados From Mexico, pureed
  • 1/2 c Heavy mayonnaise
  • 1 tbsp Wasabi paste
  • 1 tsp Soy sauce
  • 1 tbsp Lim juice
  • 1 tsp Lime zest
  • 1 tsp Sesame oil
  • 1 tsp Rice vinegar
  • 1/4 tsp Kosher salt
  • Sriracha Aioli
  • 4 oz Heavy mayonnaise
  • 1 oz Sriracha
  • 1/2 oz Lemon juice
  • 1/4 tsp Kosher salt

Instructions

    Avocado Wasabi Aioli
  1. Whisk all ingredients in medium bowl until well blended.
  2. Cover and refrigerate until ready to serve.

  1. Whisk all ingredients in a medium bowl until well blended.
  2. Cover and refrigerate until ready to serve.
    Avocado Tuna Poke
  1. Combine all ingredients in a small mixing bowl.
  2. Gently fold all ingredients together using a rubber spatula.
  3. Plate poke across a rectangular plate.
  4. Place aioli on opposite corners of the plate.
  5. Garnish poke with mixed sesame seeds and scallion ribbons. Serve as needed.
