Ingredients
- Avocado Shrimp Cocktail
- 1/4 c Lime juice
- 1/4 c Chili-Lime seasoning
- 2 c Avocado Cocktail Sauce
- 1 c Avocado and Tomato Relish
- 20 EA Grilled Spicy Agave Shrimp
- 4 EA Lime wedge
- Avocado Cocktail Sauce
- 2 1/2 c Avocados From Mexico, small diced
- 1/4 c Horseradish Sauce
- 1 Tbsp Wasabi powder, ground
- 1 Tsp Garlic, minced
- 1 Tsp Worcestershire sauce
- 1/2 Tsp Hot sauce
- 5 Tsp Lemon juice
- 5 Tsp Tap water
- 2 Tbsp Curly parsley, chopped
- 1 Tsp Kosher salt
- Grilled Spicy Agave Shrimp
- 1/4 c Olive oil
- 3 Tbsp Cajun spice, blackened, ground
- 20 EA Shrimp, peeled, deveined, tail on, 21/25
- 1/2 c Agave syrup
- Avocado and Tomato Relish
- 1/2 c Roma tomato, minced
- 1 1/2 Tbsp Red onion, minced
- 2 Tsp Green jalapeños, minced
- 2 Tsp Red bell pepper, small diced
- 1 Tsp Garlic, minced
- 1 1/4 c Avocados From Mexico, small diced
- 5 Tsp Lime juice
- 1 Tbsp Olive oil
- 1 Tsp Kosher salt ground
- 1/2 Tsp Black pepper, ground
Instructions
- Avocado and Tomato Relish
- In a mixing bowl, place diced tomato, red onion, jalapeño, red pepper, garlic and avocado.
- In a separate small mixing bowl, whisk together lime juice, olive oil, salt and pepper.
- Pour mixture over avocado-tomato relish mixture, then gently toss mixture to evenly coat.
- Place in container with lid. Refrigerate until needed for up to 24 hours.
- Grilled Spicy Agave Shrimp
- Combine olive oil and Cajun seasoning in a mixing bowl and set aside.
- Add the shrimp to the marinade and allow to marinate overnight.
- Remove the shrimp from the marinade.
- Grill shrimp until shrimp is cooked through.
- Remove from grill and toss in agave.
- Avocado Cocktail Sauce
- Place all ingredients into a food processor, processing until a smooth consistency has been reached.
- Place sauce into a clean container. Use immediately or store finished Avocado Cocktail Sauce in refrigerator, with plastic wrap pressed to the surface, to avoid browning for up to 2 days.
- Avocado Shrimp Cocktail
- Place serving glass rim-side-down into lime juice, then dip lime-rimmed glass into chili-lime seasoning blend.
- Once glass is rimmed, pour ½ cup Avocado Cocktail Sauce into glass.
- Portion ½ cup Avocado and Tomato Relish into the center of the glass on top of Avocado Cocktail Sauce.
- Place 5 Grilled Spicy Agave Shrimp tail-side-down around the entire rim of the glass.
- Garnish each Avo Shrimp Cocktail with a lime wedge and serve.
