- 350 g Whole milk
- 160 g Avocados From Mexico, diced small
- 375 g Bisquick Batter
- 260 g Corn kernels
- 5 g Kosher salt
- 150 g Avocados From Mexico, diced small
- Avocado Remoulade
- 15 oz Avocados From Mexico, diced
- 10 oz Heavy mayonnaise
- 3.5 oz Lemon juice
- 1.5 oz Whole capers
- 2 oz Creole mustard
- 1 oz Horseradish
- 1 tsp Tabasco sauce
- 1 tsp Garlic, minced
- 1.5 tsp Hungarian paprika
- 1/2 tsp Kosher salt
Instructions
- Avocado & Corn Hush Puppies
- Using a food processor, blend milk and avocado until smooth.
- Mix avocado/milk purée with Bisquick and corn until a dough forms.
- Scoop individual dumplings (use 1/2 oz disher) into 350° fryer, working in batches and frying until golden-brown.
- Serve 7 to a plate with a side of avocado remoulade.

- Place all ingredients into a food processor and pulse until a semi-chunky consistency is formed.
- Place avocado remoulade into a container. Cover and refrigerate until ready to serve.
