Avocado & Corn Hush Puppies

Ingredients

  • Avocado & Corn Hush Puppies
  • 350 g Whole milk
  • 160 g Avocados From Mexico, diced small
  • 375 g Bisquick Batter
  • 260 g Corn kernels
  • 5 g Kosher salt
  • 150 g Avocados From Mexico, diced small
  • Avocado Remoulade
  • 15 oz Avocados From Mexico, diced
  • 10 oz Heavy mayonnaise
  • 3.5 oz Lemon juice
  • 1.5 oz Whole capers
  • 2 oz Creole mustard
  • 1 oz Horseradish
  • 1 tsp Tabasco sauce
  • 1 tsp Garlic, minced
  • 1.5 tsp Hungarian paprika
  • 1/2 tsp Kosher salt

Instructions

    Avocado & Corn Hush Puppies
  1. Using a food processor, blend milk and avocado until smooth.
  2. Mix avocado/milk purée with Bisquick and corn until a dough forms.
  3. Scoop individual dumplings (use 1/2 oz disher) into 350° fryer, working in batches and frying until golden-brown.
  4. Serve 7 to a plate with a side of avocado remoulade.
    Avocado Remoulade
  1. Place all ingredients into a food processor and pulse until a semi-chunky consistency is formed.
  2. Place avocado remoulade into a container. Cover and refrigerate until ready to serve.
