Ingredients
- Avocado Banana Bread:
- 2 c. all-purpose flour
- 3/4 c. sugar
- 1/4 c. buttermilk
- 3 ea. large, very ripe bananas
- 2 ea. eggs
- 1 ea. large, very ripe Avocado From Mexico
- 1 t. vanilla extract
- 2 t. ground cinnamon
- 2 T. kosher salt
- 1 t. baking powder
- 1 t. baking soda
- French Toast Batter:
- 4 ea. eggs
- 1/4 c. milk
- 1 t. ground cinnamon
- Avocado Honey Butter:
- 1/2 ea. Avocado From Mexico
- 1/4 c. unsalted butter
- 2 T. honey
- 1 t. kosher salt
- 1 T. powdered sugar for garnish
Instructions
- Prepare the avocado banana bread: Pre-heat oven to 350°F and spray a 9-by-5-inch loaf pan with nonstick spray. In an electric mixer fitted with the paddle attachment, cream bananas and avocado together with the sugar and vanilla. Add the flour, cinnamon, salt, baking powder, and baking soda. Mix on low until incorporated, then slowly add buttermilk and eggs to the mixture until just blended, taking care not to overmix. Pour mixture into prepared pan and bake for 1 hour and 15 minutes or until a toothpick comes out clean. Let cool.
- Prepare the French toast: Heat a non-stick skillet or griddle pan over medium-high heat. Whisk together eggs, milk and ground cinnamon in shallow baking dish. Slice bread into 1-1/2” slices. Dip each slice into egg mixture, turning several times to coat. Cook French toast, working in batches if needed, until golden brown on both sides. Hold in a warm oven while you prepare honey butter.
- Prepare avocado honey butter; In a food processor, blend avocado, butter, honey and salt until well combined.
- Serve hot French toast slices with a dollop of honey butter and a sprinkle of powdered sugar.
