Ginger & Pistachio


You can’t know good until you try it. And that’s exactly what this Ginger and Pistachio Guacamole is — nutty, zingy, sweet, and salty goodness.


  • 3 ea. Avocados From Mexico, halved, pitted, & peeled
  • 2 T. fresh squeezed lime juice
  • ½ t. kosher or coarse sea salt (to taste)
  • 1 T. finely chopped peeled fresh ginger
  • 1 T. honey
  • 1 to 2 t. dried piquín chiles, crushed or chopped
  • ¼ c. coarsely chopped pistachios, plus a couple tablespoons for garnish
  • 1 to 2 T. chopped fresh chives
  • Yellow tortilla chips


  • 1. Gently mix and mash the avocados, lime juice, and salt in a bowl and set aside.
  • 2. In a medium bowl, mix the ginger, honey, and dried piquín until thoroughly combined. Add to the avocado mixture, mash, and mix. Add the ¼ cup chopped pistachios and mix until well combined. Garnish with the remaining pistachios and fresh chives.
  • 3. Serve with Yellow Tortilla Chips
