Ingredients

  • 12 EA Flour tortillas
  • 2 Tbsp Brown sugar, granulated
  • 2 Tbsp Smoked paprika
  • 1 Tbsp Chili spice, powder
  • 2 tsp Onion spice, powder
  • 2 tsp Garlic spice, powder
  • 2 tsp Kosher salt
  • 1/2 tsp Cumin spice, ground
  • 1/2 tsp Black pepper, ground
  • 2 lbs Beef brisket, trimmed
  • 2 Tbsp Avocado oil, prepared
  • 2 c BBQ sauce, prepared
  • 1/2 c Beef broth, prepared
  • 1/4 c Pickled red onions
  • 12 EA Lime wedge, fresh
  • 4 oz Sour cream, prepared
  • Pickled Red Onions
  • 2 c Red wine vinegar
  • 1/3 c White sugar, granulated
  • 2 Tbsp Kosher salt
  • 2 c Water, warm
  • 2 EA Red onions, small, peeled, sliced thin

Instructions

    Pickled Red Onions
  1. Ina mixing bowl, combine red wine vinegar, sugar, salt, and warm water. Stir to dissolve the sugar and salt.
  2. Add the sliced red onions to pickling mixture and make sure the onions are immersed in the liquid. Let onions set for approx. 1 hour.
  3. After an hour, cover and store in the fridge for up to 5 days. Serve as needed.
    BBQ Brisket Tacos
  1. In small bowl, brown sugar, paprika, chili powder, onion powder, garlic powder, salt, cumin, and pepper
  2. Pat brisket dry with paper towel; rub with avocado oil.
  3. Rub spice mixture all over brisket and let stand for 1 hour.
  4. In an Instant Pot, mix barbecue sauce with broth; add brisket to bot. Set Instant to Pressure Cook setting and set timer for 1 hour 15 minutes.
  5. When cooking cycle is complete, carefully release pressure and transfer brisket to cutting board. Cover with foil and let stand for 10 minutes
  6. Set Instant Pot to sauté setting; cook for 8 to 10 minutes or until liquid is reduced and thickened.
  7. Meanwhile, using two forks, shred meat; return to Instant Pot. Set to Keep Warm setting.
  8. Assemble tacos with tortillas, beef brisket, pickled onions, and fresh avocado.
  9. Serve immediately with lim wedges and sour cream on the side.
