Roasted Pork torta with Spicy Pickled Avocado

Ingredients

  • 6 ea Bolillo roll, halved, toasted
  • 6 c. Carnitas, prepared
  • 1 1/2 c. Avocado Salsa Verde
  • 3 c. Monterey jack cheese, shredded
  • 3/4 c. Cabbage, shredded
  • 18 slices Spicy Pickled Avocado
  • 1 1/2 c. Pickled red onion, prepared
  • Avocado Salsa Verde
  • 2/3 c. Avocados From Mexico, stage 4, mashed
  • 4 ea Tomatillos, roasted, 1/4in dice
  • 2 tsp. Lime juice, fresh
  • 3 tbsp. Cilantro, finely chopped
  • 1/3 c. Green bell pepper, minced
  • 1/3 c. White onion, minced
  • 3 tbsp. Water
  • As needed Kosher salt
  • As needed Black pepper, ground
  • Spicy Jalapeño Pickled Avocado
  • 1/2 c. Jalapeño, 1/4in slice
  • 3 ea Avocados From Mexico, stage 2, 1/2in baseball slice
  • 1 c. Carrots, peeled, thinly sliced
  • 1 c. Yellow onion, 1/4in slice
  • 4 c. Apple cider vinegar
  • 4 tbsp. Kosher salt
  • 1/2 tsp. Oregano, dried
  • 1/2 tsp. Marjoram, dried
  • 4 ea Thyme sprigs, fresh
  • 1 tbsp. Sugar

Instructions

    Roasted Pork Torta with Spicy Pickled Avocado:
  1. Heat the carnitas in a sauté pan to lightly crisp.
  2. Remove from heat and stir in avocado salsa verde, then sprinkle cheese over the top and let sit until just melted.
  3. Toast bolillo roll on the griddle. Top toasted bottom bun with carnitas mixture, shredded cabbage, spicy pickled avocado, and pickled red onion. Add top bun.
    Avocado Salsa Verde:
  1. Combine the avocado, tomatillo, lime juice, cilantro, bell pepper, onion, water, salt, and pepper in the blender and blend until smooth.
  2. Transfer to a squeeze bottle and refrigerate until needed.
    Spicy Jalapeño Pickled Avocados:
  1. Combine jalapeño, avocados, carrots, and yellow onions in a large container and set aside.
  2. In a medium sized pot, combine remaining ingredients and set over a medium-high flame.
  3. Bring to a boil, reduce heat to a low simmer, and let cook, uncovered, for 10 minutes.
  4. After 10 minutes, remove from heat and pour over vegetables.
  5. Cover and refrigerate until ready to use.
