Grilled Chicken Avocado Quinoa Tabouli Bowl

Ingredients

  • Citrus Vinaigrette
  • 1/2 c Avocados From Mexico, fresh, diced medium
  • 1/4 c Lime juice
  • 3 tsp Honey
  • 2 Tbsp Cilantro, fresh, chopped fine
  • 2 tsp Jalapeño, diced small
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper, ground
  • 2 Tbsp Olive oil
  • Grilled Chicken Avocado Quinoa Tabouli Bowl
  • 2 ea Avocado From Mexico, split, pitted, peeled
  • 2 c Quinoa, cooked
  • 2 Tbsp Olive oil
  • 2 Tbsp Lemon juice
  • 1 c Baby spinach
  • 4 ea Chicken breast, 6-ounce, grilled, diced 1/2"
  • 1 c Cherry tomatoes, halved
  • 1/2 c English cucumber, diced 1/4"
  • 1/4 c Kalamata olives, halved
  • 1 c Avocado Citrus Vinaigrette
  • 1/4 c Feta cheese
  • 4 tsp Marcona almond, chopped
  • 4 tsp Basil, fresh, chopped
  • 2 tsp Sea salt flakes
  • 4 ea Lemon wedge, grilled

Instructions

    Citrus Vinaigrette
  1. Place lime juice, lemon juice, honey, cilantro, jalapeño, salt and pepper into a blender; blend ingredients on high.
  2. While blending, slowly pour olive oil into vinaigrette to emulsify.
  3. Once vinaigrette is emulsified, pour into a mixing bowl.
  4. Fold in diced avocado.
  5. Pour vinaigrette into a clean container with a lid. Refrigerate until needed for up to 24 hours.
    Grilled Chicken Avocado Quinoa Tabouli Bowl:
  1. Place cooked quinoa into large mixing bowl.
  2. Add in olive oil and lemon juice; gently mix together.
  3. Portion dressed quinoa evenly into 4 serving bowls.
  4. For each portion, slice 1 peeled avocado half into ¼-inch slices and fan across the quinoa starting at the 1 o’clock position down to the 5 o’clock position.
  5. Top quinoa and avocado with ¼ cup baby spinach, 1 diced chicken breast, ¼ cup cherry tomatoes, 2 tablespoons cucumber, 1 tablespoon olives, 1 tablespoon feta, 1 teaspoon almonds, 1 teaspoon basil, ½ teaspoon sea salt flakes and a grilled lemon wedge.
  6. Garnish with crumbled feta cheese, almonds, basil, and salt.
  7. Drizzle ¼ cup Avocado Citrus Vinaigrette over bowl and serve.
