Avocado Strawberry Shortcakes

Ingredients

  • Avocado Mascarpone Crème
  • 1/2 c Mascarpone cream
  • 1/4 c Powdered sugar, white
  • 1/2 tsp Vanilla extract
  • 1/2 c Avocados From Mexico, purée, fresh
  • 1 Tbsp Lemon juice, fresh
  • 1/2 c Whipped cream, stabilized
  • Macerated Strawberries in Syrup
  • 8 oz Strawberries, fresh, halved
  • 1 c Simple syrup, prepared
  • 1/4 c Granulated sugar
  • 1 tsp Vanilla extract
  • Avocado Short Cakes
  • 36 oz Scone mix
  • 1 3/4 c Tap water
  • 1 Tbsp Vanilla extract
  • 1 c Avocados From Mexico, diced small
  • 2 Tbsp Granulated sugar
  • Avocado Strawberry Shortcakes
  • 4 ea Avocado Shortcake
  • 2 c Macerated Strawberries in Syrup
  • 1/4 c White chocolate, shaved
  • 8 ea Mint sprig, fresh

Instructions

    Avocado Mascarpone Crème:
  1. Place all ingredients into a food processor. Process all ingredients to a smooth consistency.
  2. Once processed, place into a clean container. Place plastic wrap over top of crème and press down firmly to prevent oxidation. Place lid on top of plastic wrap to seal. Refrigerate until needed for up to 24 hours.
    Macerated Strawberries in Syrup:
  1. Place all ingredients into mixing bowl. Gently toss together until well combined.
  2. Allow macerated fruit to marinate for at least 1 hour before serving. Leave strawberries in syrup until needed.
    Avocado Short Cakes:
  1. Preheat the oven to 400°.
  2. Add scone mix, water, and vanilla into a mixing bowl.
  3. Fold in diced avocado.
  4. Place dough onto floured surface. Cut into 4-ounce pieces and shape into circles.
  5. Dip each dough round into sugar to coat the top.
  6. Place onto a parchment-lined sheet pan. Bake for 10 to 12 minutes.
  7. Remove from oven and allow to cool. Serve as needed.
    Avocado Strawberry Shortcakes:
  1. Using a serrated knife, split Avocado Shortcake in half. Place each bottom half onto a serving dish.
  2. Spoon ½ cup Macerated Strawberries in Syrup over bottom half of shortcake.
  3. Pipe ¼ cup Avocado Mascarpone Crème over strawberries.
  4. Place top piece of shortcake off-center, on top of crème.
  5. Top each shortcake with 1 tablespoon white chocolate shavings and add a sprig of fresh mint to the side. Serve.
