Avocado Hummus Guacamole with Tapenade

Ingredients

  • Avocado Tapenade
  • 3/4 c Kalamata olives, pitted
  • 1/4 c Sun-dried tomatoes, chopped
  • 2 Tbsp Olive oil
  • 2 Tbsp Lemon juice, fresh
  • 2 Tsp Capers, drained
  • 1 Tsp Garlic, fresh, minced
  • 1/8 Tsp Kosher salt
  • 1/4 c Red peppers, roasted, chopped
  • 1 c Avocados From Mexico, small diced
  • 2 Tbsp Flat-leaf Italian parsley, chopped
  • Avocado Hummus Guacamole
  • 3/4 c Chickpeas, drained, canned
  • 2 Tbsp Tahini paste
  • 5 Tsp Lemon juice
  • 2 Tsp Garlic, chopped
  • 1/4 c Olive oil
  • 1 1/2 c Avocados From Mexico, mashed
  • 2 Tbsp Flat-leaf Italian parsley, fresh
  • 1/8 Tsp Cayenne pepper
  • 1/8 Tsp Smoked paprika, ground
  • To Build
  • 2 c Avocado Hummus Guacamole
  • 1 Tsp Olive oil
  • 1 1/2 oz Avocado Tapenade
  • 6 ea Zucchini sticksm fresh
  • 6 ea Yellow squash sticks, fresh
  • 6 ea Carrot sticks, fresh
  • 6 ea Cherry tomatoes, fresh, whole

Instructions

    Avocado Tapenade:
  1. Place olives, tomatoes, olive oil, lemon juice, capers, garlic and salt into a food processor, processing until ingredients are finely chopped but not puréed.
  2. Process until ingredients are chopped finely, but not pureed.
  3. Place olive mixture into a bowl.
  4. Gently fold in roasted red peppers, avocados, and parsley.
  5. Gently fold in roasted red pepper, avocado and parsley. Serve immediately.
    Avocado Hummus Guacamole:
  1. Place all ingredients into a food processor, processing until a smooth consistency has been reached.
  2. Once processed, pour hummus into a clean container. Place plastic wrap over top of hummus and press down firmly to prevent oxidation. Place lid on top of plastic wrap to seal. Refrigerate until needed for up to 24 hours.
    To Build:
  1. Place Avocado Hummus Guacamole into clean serving dish.
  2. Garnish with olive oil and paprika.
  3. Place Avocado Tapenade into center of guacamole.
  4. Serve with zucchini sticks, squash sticks, carrot sticks and cherry tomatoes.
