Ingredients

  • 20 medium shrimp, deveined and peeled
  • juice of half a lemon
  • 2 finely chopped chipotle chiles with its marinade
  • 1 TB chopped cilantro
  • 3 Avocados From Mexico
  • 2 tb olive oil
  • 2 green onions, finely chopped
  • juice of ½ lemon
  • chopped cilantro
  • 8 corn toast

Instructions

  1. To make guacamole: In a médium bowl, mash avocados with a fork. Add oil, onion, cilantro, lemon, salt and pepper to taste. Reserve In a medium skillet over high heat add the oil and cook the shrimp until they are pink. Add the lemon juice, chili chipotle and cooking for 5 minutes.
  2. To each piece of toast, add a little guacamole and then add the shrimp. Garnish with cilantro and serve.
