- 1/3 cup canola oil
- 2 tablespoons white wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon chopped shallot 1 small shallot
- 1/4 cup chopped cilantro
- 1 pinch of cilantro seed
- 1 pinch of cumin
- 1 ounces package of 6of butter lettuce
- 1 medium cucumber
- 1 cup diced fresh pineapple
- 1 cup diced Hass Avocado
- 1/2 cup whole fresh cilantro leaves
- For the dressing: Mix with a whisk the first 7 ingredients in a medium bowl.
- Combine in a large bowl remaining ingredients. Add dressing and stir well. Serve & divide salad on 4 plates
- RECOMMENDATION: You can add chicken or grilled meat or any protein you like to this salad.
