Ingredients

  • 1/3 cup canola oil
  • 2 tablespoons white wine vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped shallot 1 small shallot
  • 1/4 cup chopped cilantro
  • 1 pinch of cilantro seed
  • 1 pinch of cumin
  • 1 ounces package of 6 of butter lettuce
  • 1 medium cucumber
  • 1 cup diced fresh pineapple
  • 1 cup diced Hass Avocado From Mexico
  • 1/2 cup whole fresh cilantro leaves

Instructions

  1. For the dressing: Mix with a whisk the first 7 ingredients in a medium bowl.
  2. Combine in a large bowl remaining ingredients. Add dressing and stir well. Serve & divide salad on 4 plates
  3. RECOMMENDATION: You can add chicken or grilled meat or any protein you like to this salad.
