Ingredients

  • 1 white onion, cut into very thin slices
  • 1 chile w/out seeds, cut into very thin strips if you can't find it you can supplement w/ green pepper.
  • 1 cup mushrooms sliced
  • 1 cup cottage cheese or crumbled fresh cheese
  • 1 hass Avocado From Mexico, cut into thin slices (slice when your ready with the tacos so avocado does not darken)
  • 2 tablespoons vegetable oil
  • 8 corn tortillas
  • salt to taste

Instructions

  1. In a frying pan add the oil, once hot add onion, chile and the mushrooms and let brown over low heat. Add a little water to avoid burning.
  2. Once tender add cottage cheese or fresh cheese and seasoned with a little salt.
  3. Heat tortillas.
  4. To fill them first place a slice of avocado and a little of the prepared mixture and serve.
  5. You can accompany the tacos with a bit of refried beans.
