Flavor your next flank steak with this delicious chimichurri sauce! Made with avocado, garlic, cilantro, parmesan cheese and more, it is a creamy addition to this protein! Pair with roasted veggies and rice for a meal to remember!

Ingredients

  • 6 pounds of churrasco (skirt steak)
  • 1 cup of apple cider vinegar
  • 1 cup of soy sauce
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • 1 teaspoon dried basil
  • 1 teaspoon of paprika
  • 1 teaspoon of black pepper
  • 1/4 olive oil
  • 4 bunches of cilantro
  • 8 cloves of garlic
  • 1 cup of olive oil
  • 2 green peppers
  • 2 hass avocados skinless and boneless
  • 2 teaspoons mustard
  • 1 cup of white vinegar
  • 6 tablespoons of parmesan cheese
  • 2 cups diced onion
  • 1/2 teaspoon pepper
  • 1 teaspoon salt

Instructions

  1. Mix all ingredients and let the meat marinate for 15 minutes in the refrigerator.
  2. Heat grill, place meat and let them cook 5-6 minutes per side. Turn off the heat and let steak sit so that the steak juices settle.
  3. Blend all ingredients in a food processor and refrigerate. Remove from refrigerator a few minutes before serving so that the sauce is at room temperature.
