Ingredients

  • 3 ripe Avocados From Mexico halved, pitted, meat scooped out and diced
  • 2 tomatillos husked, rinsed, finely chopped
  • 1 cup fresh ripe mango diced and peeled
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro leaves and upper part of stems only
  • 1 to 2 jalapeƱo or serrano chiles seeding optional
  • 2 tablespoons fresh squeezed lime juice
  • 1 teaspoon kosher salt or sea salt or to taste
  • 1/2 cup crumbled queso fresco or mild feta

Instructions

  1. In a large bowl or molcajete, gently mash the avocado.
  2. Incorporate the mango, tomatillo, onion, cilantro, chile, lime juice and salt and mix well. Top with the crumbled queso fresco.
