- Avocado Al Pastor Taco
- 6 ea. 6" Corn Tortilla, Warm
- 12 pieces Avocado Al Pastor (see below)
- 6 T. Pineapple, Grilled, 1/2" Diced
- 6 T. White Onion, 1/4" Diced
- 2 T. Cilantro, Roughly Chopped
- 6 T. Chicharrons, Prepared, Crushed
- Al Pastor Marinated Avocados
- 3/4 c. Chili powder
- 6 T. Garlic, Minced
- 3/4 c. White Vinegar
- 6 T. Lime Juice, Fresh
- 3/4 c. White Onion, Minced
- 3 T. Achiote Paste
- 1 T. Ground Cinnamon
- 3/4 t. Ground Allspice
- 1 t. Ground Cumin
- 2 t. Dried Oregano
- 1 t. Dried Thyme
- 1 t. Kosher Salt
- 3/4 t. Black Pepper
- 12 Slices Avocados From Mexico, Stage 2, 1/2" Sliced
Instructions
- Avocado Al Pastor Taco Directions:
- Build each taco in the following order and amounts.
- 1 Each Warm 6” Corn Tortilla
- 12 Pieces Avocado Al Pastor
- 1 Tbsp Grilled Pineapple
- 1 Tbsp Diced White Onion
- 1 Tsp Chopped Cilantro
- 1 Tbsp Crushed Chicharrones
- Al Pastor Marinated Avocados Directions:
- In a medium bowl, whisk all the ingredients besides the avocado together until they are all evenly combined.
- Pour the marinade over the sliced avocados and hold in an airtight container in the refrigerator overnight until ready to use.
