Avocado Tuna Poke

Ingredients

  • Avocado Tuna Poke
  • 1 lb Ahi Tuna, small diced
  • 1/4 c Jalapeño, finely diced
  • 1/4 c English cucumber, finely diced
  • 1 c Scallion, finely sliced
  • 1 c Avocados From Mexico, small diced
  • 1/2 c Pine nuts, toasted
  • 1/4 c Sesame oil
  • 1/4 c Red onion, small diced
  • 1/2 c Wasabi Aioli
  • 1/2 c Sriracha Aioli
  • 4 tsp Sesame seeds, black and white
  • 1/4 c Scallion ribbons
  • Avocado Wasabi Aioli
  • 1/2 c Avocados From Mexico, puréed
  • 1/4 c Heavy mayonnaise
  • 1 1/2 tsp Wasabi paste
  • 1/2 tsp Soy sauce
  • 1 1/2 tsp Lime juice
  • 1/2 tsp Lime zest
  • 1/2 tsp Sesame oil
  • 1/2 tsp Rice vinegar
  • 1/8 tsp Kosher salt
  • Sriracha Aioli
  • 1/2 c Heavy mayonnaise
  • 2 Tbsp Sriracha
  • 1 Tbsp Lemon juice
  • 1/4 tsp Kosher salt

Instructions

    Avocado Wasabi Aioli
  1. Whisk all ingredients in medium bowl until well blended.
  2. Cover and refrigerate until ready to serve.

  1. Whisk all ingredients in a medium bowl until well blended.
  2. Cover and refrigerate until ready to serve.
    Avocado Tuna Poke
  1. Combine tuna, jalapeño, cucumber, sliced scallion, avocado, pine nuts, sesame oil and onion in a small mixing bowl, gently folding ingredients together using a rubber spatula.
  2. Portion poke mixture onto 4 12-inch rectangular plates.
  3. Place 2 tablespoons each Avocado Wasabi Aioli and Sriracha Aioli on opposite corners of plate.
  4. Garnish with 1 teaspoon sesame seeds and 1 tablespoon scallion ribbons to serve.
