Avocado Red Mole Chilaquiles

Ingredients

  • Sizzling Red Mole Chilaquiles
  • .75 cup grapeseed oil
  • 1.5 quarts red bell pepper, roughly chopped, roasted
  • 4.5 quarts chayote squash, medium diced, roasted
  • 3 quarts tomato, 1/4" sliced, roasted
  • .75 cup garlic, minced
  • 3 tablespoons kosher salt
  • 3 quarts Avocado Red Mole, sub-recipe
  • 2.25 gallons tortilla chips
  • 1.5 quarts chihuahua cheese, shredded
  • 24 each eggs, fried
  • 3 cups avocado relish, sub-recipe
  • 1 cup radish, shaved
  • Avocado Red Mole
  • 2.5 quarts red mole base, prepared
  • 1.5 quarts Avocados From Mexico, stage 3, roughly chopped
  • 1 quart orange juice
  • 4 teaspoons kosher salt
  • 1 cup fresh lime juice
  • Avocado Relish
  • 3 cups citrus pickled avocado, sub-recipe
  • 1 tablespoon garlic, shaved
  • .75 cup corn off the cob, roasted
  • .75 cup red onion, julienned
  • 3 tablespoons cilantro, roughly chopped
  • .75 teaspoon kosher salt
  • .75 cup red bell pepper, brunoised
  • Citrus Pickled Avocado
  • 1 pint fresh lemon juice
  • .5 cup sugar, granulated
  • 1 tablespoon kosher salt
  • .75 tablespoon Tajin spice
  • 1 cup orange juice
  • .25 tablespoon vegetable oil
  • 3 cups Avocados From Mexico, stage 2, medium diced

Instructions

  1. Sizzling Red Mole Chilaquiles Instructions: In a large sauté pan, heat oil over high heat before adding the roasted pepper, squash, and tomato. Sauté for 3-4 minutes until the vegetables begin soften. Add garlic and salt, cook for another 30 seconds. Add half Avocado Red Mole and toss to combine. / For each individual serving, place 1.5 cups of chips in a bowl and toss with roughly 1.5 cups mole vegetable mixture, and pour another .25 cup mole into mixture and toss until combined. Place in a small oven-proof or cast-iron skillet. / Top with .25cup of chihuahua cheese and bake at 350° until the cheese is completely melted. / Finish each dish with 1 fried egg, 2 Tablespoons of avocado relish, and 1 Tablespoon of shaved radish.
  2. Avocado Red Mole Instructions: Add all ingredients into a food processor and blend until smooth. / Reserve under refrigeration until ready to use.
  3. Avocado Relish Instructions: In a medium size bowl, combine all of the ingredients and hold refrigerated until ready for use.
  4. Citrus Pickled Avocado Instructions: In a medium size bowl, combine all of the ingredients and hold refrigerated until ready for use.
