Ingredients

  • 1 tbsp vegetable oil
  • 1 cup Chopped onion
  • 3/4 cup Shredded carrot
  • 1 lbs ground lean beef
  • 2 tsp taco seasoning
  • 1/2 tsp Salt Divided
  • 1 Jar salsa 12 oz, about 1 ½ cups
  • 2 Avocado From Mexico halved pitted and peeled
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp lime juice
  • 2 cups Lettuce shredded
  • 12 taco shells
  • 2 cups cheese Grated

Instructions

  1. In large skillet, heat oil over medium-low heat.
  2. Add onion; sauté until soft, about 5 minutes; remove 1/2 cup of the onion; set aside.
  3. Add carrot to onion in skillet; cook and stir 1 minute.
  4. Add beef; cook and stir until browned, breaking up large chunks as you stir, about 10 minutes; spoon off any fat from pan.
  5. Stir in taco seasoning and 1/4 teaspoon salt; cook 1 minute longer.
  6. Add salsa.
  7. Cook and stir until hot and thickened, about 5 minutes.
  8. In small bowl, mash together avocado, cilantro, lime juice, reserved remaining onion and 1/4 teaspoon salt.
  9. Divide lettuce equally among taco shells; top each with about 1/4 cup beef mixture.
  10. Divide 1-1/2 cups of the cheese into shells.
  11. Top each with avocado mixture; sprinkle with remaining 1/2 cup cheese.
