Ingredients

  • 2 Large Bell Peppers
  • 1 Avocado From Mexico halved pitted and peeled
  • 1 tbsp lime juice
  • 1/4 tsp salt
  • 14 Medium Shrimp Cooked split lengthwise, about 12 oz
  • 1/3 cup prepared salsa

Instructions

  1. In a small bowl, combine avocado with lime juice and salt; mash until mixture is chunky.
  2. In another small bowl, combine shrimp and salsa. Arrange pepper squares on work surface, skin side down.
  3. Spoon avocado mixture on squares, dividing evenly; top each with half a shrimp and a cilantro leaf, if desired.
  4. Cover surface with plastic wrap and refrigerate until ready to serve
