Ingredients
- "Fries":
- 2 ea. Avocados From Mexico, each cut into 8 wedges
- 2 ea. large eggs
- 1/2 c. all-purpose flour
- 1/2 c. panko bread crumbs
- 1/2 t. salt
- 1/2 t. black pepper
- Non-stick cooking spray to taste
- Chipotle Mayo:
- 1 c. mayonnaise
- 2 t. fresh lime juice
- 1 t. chipotle powder
- 1/2 t. chili powder
- 1/2 t. salt
Instructions
- Spray the Air Fryer basket with cooking spray.
- In a medium bowl, whisk together the eggs with salt and black pepper.
- In a shallow bowl, place the all-purpose flour.
- In another shallow bowl, place the panko bread crumbs.
- Dredge each avocado slice in flour, shaking off the excess.
- Dip into egg mixture and then dredge in the panko breadcrumbs, pressing lightly to adhere.
- Place the avocado wedges into the Air Fryer basket and cook at 400ºF for 9-11 minutes. Turn them over halfway through cooking.
- While the avocados are frying, in a medium bowl, combine all of the chipotle mayo ingredients and whisk until smooth.
- Once avocado “fries” are done, serve with chipotle mayo.
