Air-Fried Avocado Fries with Chipotle Mayo

Air-Fried Avocado Fries with Chipotle Mayo

INGREDIENTS

  • "Fries":
  • 2 ea. Avocados From Mexico, each cut into 8 wedges
  • 2 ea. large eggs
  • 1/2 c. all-purpose flour
  • 1/2 c. panko bread crumbs
  • 1/2 t. salt
  • 1/2 t. black pepper
  • Non-stick cooking spray to taste
  • Chipotle Mayo:
  • 1 c. mayonnaise
  • 2 t. fresh lime juice
  • 1 t. chipotle powder
  • 1/2 t. chili powder
  • 1/2 t. salt

INSTRUCTIONS

  1. Spray the Air Fryer basket with cooking spray.
  2. In a medium bowl, whisk together the eggs with salt and black pepper.
  3. In a shallow bowl, place the all-purpose flour.
  4. In another shallow bowl, place the panko bread crumbs.
  5. Dredge each avocado slice in flour, shaking off the excess.
  6. Dip into egg mixture and then dredge in the panko breadcrumbs, pressing lightly to adhere.
  7. Place the avocado wedges into the Air Fryer basket and cook at 400ºF for 9-11 minutes. Turn them over halfway through cooking.
  8. While the avocados are frying, in a medium bowl, combine all of the chipotle mayo ingredients and whisk until smooth.
  9. Once avocado “fries” are done, serve with chipotle mayo.
