Tony’s Touchdown Guacamole

He’s ready to share his guacamole knowledge, that’s much more than a game-day dip, with all with you!

Ingredients

  • Peaches:
  • 1/4 cup Dry BBQ Rub (recipe follows)
  • For Dry BBQ Rub:
  • 1/2 cup brown sugar
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp ground black pepper
  • 2 ripe Avocados From Mexico halved, pitted, meat scooped out and roughly mashed or diced
  • 2 tbsp coarsely chopped cilantro leaves
  • 2 tbsp freshly squeezed lime juice
  • 1 cups sliced peaches
  • 1 tbsp vegetable oil
  • 2 tbsp dry mustard powder
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp cayenne chili powder
  • For Guacamole:
  • 3 tbsp chopped white onion
  • 2 tbsp finely chopped jalapeño or serrano chili seeded optional, or to taste
  • 1 tsp kosher or coarse sea salt or to taste

Instructions

  1. In a medium bowl, gently mix the avocado, onion, cilantro, chile, lime juice and salt, or mash in a molcajete. Scrape onto serving bowl.
  2. Pre-heat a grill or grill-pan over medium heat. Generously rub 1/4 cup BBQ Rub over the sliced peaches. Once grill pan is hot, brush with oil. Grill the peach slices a couple minutes per side. Remove from the heat. Once cool enough, coarsely chop and top over guacamole.
  3. Serve with sliced toasted baguettes, tortilla chips or the chips of your choice.
  4. DRY BBQ RUB INSTRUCTIONS: Combine the dry BBQ Rub ingredients in a bowl, mix well.
