Ingredients
3 Avocados From Mexico
6 large basil leaves
1 tbsp balsamic vinegar reduction
1 tsp best olive oil
20 roasted grape tomatoes
2 lemons juiced
3 clove garlic
Salt and pepper
Instructions
In a bowl, mix halved tomatoes, olive oil, salt, pepper, and garlic together. Transfer to a baking sheet and roast at 400°F until the tomatoes are tender.
Combine all other ingredients in a bowl and whisk the mixture until all ingredients are incorporated evenly and the guacamole is smooth. Fold in roasted tomatoes. Season to taste.
Transfer mixture to a serving bowl and garnish with basil leaves, a drizzle of balsamic, and more roasted tomatoes.
