Great Galentine’s Day Recipes

It’s no secret Valentine’s Day is one of the busiest days of the year in the restaurant business, but February 14 is quickly becoming the second jab of a profitable one-two punch for restaurants taking advantage of the growing trend known as Galentine’s Day.

Celebrated on February 13, Galentine’s Day has started to catch on thanks to mentions on popular TV shows. Originally intended as a distraction for single ladies to forget about the impending day of romance, it has since evolved into a day for all women (single and spoken for) to celebrate each other.

Use these recipes to create a Galentine’s Day-themed menu to make sure your restaurant takes advantage of all February holidays – sitcom-inspired and otherwise.

Chocolate Avocado Waffles

Ingredients:

2 tablespoons mashed avocado

1/4 cup cocoa

1 large egg

1 cup waffle mix

2/3 cup milk

2 tablespoons semi-sweet chocolate morsels

Instructions:

1. Blend avocado, cocoa powder and egg in a medium bowl

2. Stir in waffle mix and milk until smooth

3. Fold in chocolate morsels

4. Pour batter into waffle maker and heat until cooked through

5. Top with butter, strawberry slices, blueberries and confectioner’s sugar as desired

 

Breakfast Calzone

Breakfast Calzone

Ingredients:

2 peeled and pitted avocados

2 tablespoons mayonnaise

1 tablespoon cilantro paste

1 tablespoon lime juice

1 pound pizza dough

3/4 pound cooked, drained and crumbled bacon

1 pound shredded cheddar cheese

12 scrambled eggs

Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees

2. Mash avocados, mayonnaise, cilantro paste, lime juice, salt, and pepper until smooth

3. Divide dough into six equal pieces and work each piece into 6-inch circles

4. Spread avocado mixture on one half of each dough circle

5. Evenly distribute eggs, bacon, and cheese onto avocado mixture on each piece of dough

6. Lightly wet bottom edge of dough with water and carefully stretch top half of dough circle over the filling, pressing firmly into edge of bottom half to form a half moon shape

7. Seal calzones by pressing edges with the tines of a fork and cut a small slit in the top of each calzone for venting

8. Bake for approximately 30 minutes or until calzones are golden brown

9. Serve warm with a cup of remaining avocado mixture for dipping

 

Avocado and Crab Mimosa

Avocado and Crab Mimosa

Ingredients:

2 peeled and pitted avocados

1 minced scallion

2 teaspoon lemon juice

1/4 teaspoon salt

Hot pepper sauce

3 tablespoons mayonnaise

2 tablespoons chili sauce

1 tablespoon horseradish sauce

1/2 teaspoon Worcestershire sauce

Ground pepper

8 ounces cooked fresh crab meat

2 cups watercress

2 hard-cooked egg yolks

1 tablespoon fresh chopped parsley

Instructions:

1. Mash avocado, scallion, 1 teaspoon lemon juice, salt, and a dash of hot pepper sauce in a small bowl until combined

2. In a separate bowl, mix mayonnaise, chili sauce, horseradish, Worcestershire, and remaining lemon juice. Add salt and pepper to taste

3. Cut remaining avocados into half-inch cubes and gently combine with crab meat. Fold in mayonnaise mixture until evenly coated

4. Press egg yolks through a fine mesh sieve and combine with parsley in a small bowl

5. Line serving dish with watercress and top with crab mixture, a dollop of mashed avocado mixture, and a sprinkle of yolk and serve

 

(Bleepin’) Avocado

(Bleepin’) Avocado

Ingredients:

1 1/2 ounces cucumber vodka

1/4 ounce agave nectar

1/4 ounce avocado puree

Splash of lemon juice

Splash soda water

Ice

1 lemon wedge for garnish

Instructions:

1. Combine vodka, agave, avocado, and lemon juice in a cocktail shaker filled with ice

2. Shake and strain into a rock glass with ice

3. Top with soda water and add lemon garnish
