Grilled Corn Guacamole

Ingredients

  • 2 ea. Avocados From Mexico, halved, pitted, & peeled
  • 1 ea. lime, juiced
  • 1 T. extra virgin olive oil
  • 1 T. sour cream
  • 1 t. Chipotle Pepper Sauce
  • 1 ea. ear of corn, grilled & kernels removed
  • 1 ea. tomato, seeded & diced
  • 1/2 t. cilantro, finely chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a medium bowl, mash the avocados to your desired consistency.
  2. Fold in lime juice, olive oil, sour cream, hot sauce, corn, tomatoes, and cilantro until the ingredients are well combined. Season with salt and pepper.
