Chicken Guacamole

  • Serves 4

Ingredients

  • 1 roasted chicken breast
  • 3 ea. ripe Avocados From Mexico, peeled, seeded and cut in half
  • 2 ea. tomatoes, finely chopped
  • 1/4 onion, finely chopped
  • 1 ea. Serrano chile, finely chopped (remove seeds before cutting to make it less spicy)
  • 1 1/2 T. lemon juice
  • 2 T. fresh cilantro, chopped
  • Salt and pepper to taste
  • Tortilla or pita chips to serve

Instructions

  1. In a bowl, prepare the chicken breast by shredding it.
  2. In another bowl, prepare the avocados by mashing them until chunky.
  3. Add tomatoes, chicken, onion, chile and cilantro, and lemon juice to the mashed avocados. Mix gently. Season with salt and pepper.
  4. Put the guacamole in a bowl and serve with tortilla or pita chips (optional).
