Here are some delicious eatable ideas you could help Mom or Dad pack in your lunch for Cinco de Mayo. Just beware, this will probably make your friends want to trade lunches with you.
Let’s be real, kids, Cinco de Mayo or not, quesadillas are awesome. And your parents wouldn’t mind this request since a quesadilla combines great taste and easy prep. Shoot, you could even offer to help with this one yourself! Technically, all you really need is a flour tortilla and some cheese. Of course, ingredients like chicken, shrimp, and guacamole will take your quesadilla to the next level — and, really, the sky is the limit on what you can stuff between your tortillas. You can even convince mom or dad to use that leftover turkey from last night’s dinner.
Another dish your parents will find easy-to-make, and you’ll find mind-blowingly delicious. Fajitas require ingredients similar to the quesadilla, but offer up the opportunity for onions, bell peppers, and marinated meats to come into play. Once the lunch bell rings, all you need to do is pop the dish into the microwave and celebrate in style.

Surely you love a burrito bowl from your local burrito shop, but your parents don’t need professional help to replicate this tasty lunch option. Your folks will need a bowl … and that’s where the prerequisites end. From there, make sure your parents pack your favorite Mexican ingredients — meats, cheeses, guac, beans — into a plastic container and voila, a great lunch and no mess.

This is fun because you can place the dip in the center of your circle of friends and pour the chips into a community bowl. What better way to get your pals feeling as festive as you do?
