Quarterback-sacking Salsa
  • 1 fully ripe Avocado from Mexico halved, pitted, peeled and diced
  • 1/4 cup vinaigrette salad dressing
  • 1/4 cup scallions sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime peel, grated
  • 1 cup black beans drained & rinsed
  • 1 cup corn kernels
  • 1/2 cup red pepper diced

Step 1

In a large bowl, whisk together salad dressing, scallions, cilantro and lime peel.

Step 2

Stir in beans, corn and red pepper.

Step 3

Add Avocado; toss gently.

Step 4

Season with salt, if desired. Adding the right amount is the secret.
