Seafood Guacamole With Lobster, Scallops, and Shrimp

  1. In a large bowl or molcajete, mash together 3 of the avocados, diced tomatoes, shallots, smoked sea salt, cilantro leaves and the juice of the lime until well combined.
  2. Stir in the remaining diced avocado leaving chunks intact.
  3. Heat the coconut oil in a 12 inch skillet over medium high heat until melted; stir in the chili paste and annatto paste. Add the shrimp and cook for 2 minutes, stirring occasionally. Add the scallops to the skillet and cook until both shrimp and scallops are opaque and cooked through, about 1-2 additional minutes. Remove the skillet from the heat and stir in the cooked lobster and the chopped scallions.
  4. Mound the seafood mixture over the guacamole in the molcajete and finish with the remaining 1/4 teaspoon of smoked sea salt. Garnish with deep fried lime slices and fresh cilantro leaves if desired.
