- 2 Avocados From Mexico
- 1 1/2 cups cucumber diced
- 1 large lemon squeezed (or two small)
- 1/4 tsp cumin powder
- 1/2 tsp chipotle powder
- 3/4 tsp salt
- 1/4 cup cilantro finely chopped
- Remove pits from avocado and add flesh to a small bowl.
- Mash in the fresh lemon juice, chipotle powder, cumin, cilantro and salt.
- Then to lighten things up in each scoop, fold in cool diced cucumber. Serve with a fresh lemon garnish and a sprig of cilantro over top.
