Ingredients

  • Guacamole:
  • 3 ripe Fresh Mexican Avocados From Mexico halved, seeded, peeled and quartered
  • 1/4 cup chopped fresh cilantro
  • 1/2 medium red onion diced fine
  • 4 serrano peppers stemmed, seeded and finely diced
  • 2 Tbsp freshly squeezed lime juice
  • salt to taste
  • freshly ground black pepper to taste
  • Tomato and Applewood Smoked Bacon Garnish
  • 2 roma tomatoes seeded and diced
  • 3 Tbsp extra virgin olive oil
  • 3 serrano chiles stemmed, seeded and finely diced
  • 1 Tbsp chopped cilantro
  • salt to taste
  • freshly ground black pepper to taste
  • 4 strips Applewood smoked bacon cooked until very crispy and then crumbled into bits
  • 1/4 cup Crumbled cotija cheese

Instructions

  1. For the guacamole, place avocados in a mixing bowl. Mash with a potato masher or fork until chunky.
  2. Add the remaining ingredients and combine with a fork.
  3. Taste and adjust seasonings as necessary.
  4. For the tomato bacon garnish,Toss tomatoes, olive oil and cilantro with salt and pepper, to taste.
  5. Add crispy bacon bits, diced serrano and cotija cheese and toss well.
  6. Garnish on top of the guacamole.
