  1. For the guacamole, place avocados in a mixing bowl. Mash with a potato masher or fork until chunky.
  2. Add the remaining ingredients and combine with a fork.
  3. Taste and adjust seasonings as necessary.
  4. For the tomato bacon garnish,Toss tomatoes, olive oil and cilantro with salt and pepper, to taste.
  5. Add crispy bacon bits, diced serrano and cotija cheese and toss well.
  6. Garnish on top of the guacamole.
