Avocado, Corn and Cheese Scramble

Directions

  1. In a large bowl, beat eggs until frothy;
  2. Stir in corn and salt; set aside.
  3. In a large skillet, melt butter over medium heat.
  4. Add onion; sauté until lightly browned, about 3 minutes.
  5. Add egg mixture; cook and stir gently until mixture begins to set, about 2 minutes.
  6. Stir in cheese; cook and stir until eggs are firm, about 3 minutes longer. Remove pan from heat.
  7. Fold in avocado and transfer to serving platter.
  8. Serve with warm tortillas, if desired.
