  • 1 T. butter
  • 6 ea. large eggs
  • 1/4 t. salt
  • 1/4 t. pepper
  • 4 ea. 8-inch flour tortillas, warmed
  • 4 ea. slices of ham
  • 1/2 c. sharp cheddar cheese, slices
  • 1/4 c. salsa
  • 1 ea. Avocado From Mexico, pitted, peeled, & sliced

  1. In a medium bowl, beat eggs with salt and pepper.
  2. Heat butter in a large skillet over medium heat. Add eggs and cook until set or to desired doneness, stir continuously.
  3. On each tortilla, place one slice each of ham and cheese; top with eggs, avocados, and salsa; roll up tightly.
