  • 4 ea. medium Avocados From Mexico, diced
  • 1 c. roasted peanuts, roughly chopped
  • 1 c. baby arugula
  • 1 ea. pint cherry tomatoes, halved
  • 1 ea. jalapeño, minced
  • 1/2 ea. lime, juiced
  • 1/4 ea. head green cabbage, shredded
  • 1/4 c. cilantro, minced
  • 1 T. mint, minced
  • 1 T. sugar
  • 1 T. ginger, grated
  • 2 t. Sriracha hot sauce
  • 2 t. salt
  • 1-1/2 t. white wine vinegar
  • 3/4 t. Chaat masala
  • 1/4 t. ground cumin
  • 1/4 t. pepper
  • 1 pinch cayenne pepper

Instructions

  1. In a medium bowl, whisk together lime juice, sugar, ginger, sriracha, vinegar, chaat masala, cumin, cayenne pepper, jalapeño, cilantro, mint, salt, and pepper until well combined.
  2. In a medium bowl combine cabbage, arugula, scallions, avocados, and cherry tomatoes; gently toss with dressing and top with peanuts.
