    I’ve made guacamole, what should I do now?

    If you’ve made guacamole and do not plan to serve it right away, we recommend placing it in an air-tight container and covering the guacamole with clear plastic wrap before refrigerating.  

    • Be sure to press the plastic wrap directly against the surface of the guacamole.
    • Other ingredients in the guacamole such as tomatoes or lime juice will serve as an acidic agent and help preserve it.

     

    • If some oxidation occurs on the avocado or guacamole while stored in the refrigerator, simply discard the top layer and enjoy the rest.

     

    • Guacamole should not be left out for more than 2 hours – chances are it will be gobbled up before then!
      • Guacamole can be stored in the refrigerator for 3-4 days.

     

    • As with all fruits and vegetables, we recommend that you wash the avocados before cutting and serving them.
      • Be sure to keep your food preparation area clean to prevent cross-contamination with other foods like meat, poultry or seafood.

    innovative way to store avocados is with the “Avocado Green Marble method developed by Avocados from Mexico. This is a beautiful technique used primarily by restaurants but can be enjoyed at home as well.

    • Cut open two avocados, remove the pit and gently cut 1” cross-hatches in the flesh.
    • Scoop out cubed flesh with a large spoon into a bowl. Add seasoning to taste and gently fold, keeping cubes intact.
    • Spoon the mixture into an 8×6” vacuum sealing bag, and seal bag to 99% or until machine self-seals.
    • Remove bag from machine and use hands to evenly disperse mixture, then flatten to 1/8-1/4” thick. Lay flat on sheet pan and freeze for up to 3 days.
    • Avocado Green Marble thaws quickly so it should be prepped and plated within 5 minutes after removing from the freezer.
    • Use a knife, ring or mold to cut the desired shape. Transfer to a plate and add your favorite toppings or ingredients.

    Should I freeze avocados?

    We do not recommend freezing whole, cut or diced avocados as the process affects the fruit’s texture.

    How long can I store Pureed avocados?

    Pureed avocados can be stored in the freezer for use within 4-5 months.

    • Place the peeled avocado in a blender or food processor with a little lemon or lime juice. Puree until smooth and place in an air-tight container in the freezer.
    • Be sure to leave about an inch of extra space in the container to allow for expansion.

    I opened an avocado but it is not ripe. What do I do?

    If you have opened an avocado and find it to be unripe, brush or squeeze lemon or lime juice on the surface of the two halves. Replace the two halves together, cover with plastic wrap and place in the refrigerator. Check the avocado daily for ripeness.
